Banana Bread

Banana bread is good - it's good for breakfast, lunch, dessert, or warmed with butter.
You can add stuff to it - nuts, mini chocolate chips - or my new favorite - chopped dates!

I've totally reworked this recipe because the original is too dense - this one is now my favorite!

  • 2 eggs, beaten
  • 1/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 mashed bananas
  • 3/4 cups white sugar
  • 3/4 cup brown sugar
  • 1 3/4 cups all-purpose flour - maybe 1/4 cup more if batter is too thin
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)


  1. Preheat oven to 350 degrees F . Spray one 9x5 inch loaf pan with non-stick spray coating.
  2. Blend together the eggs, buttermilk, oil and bananas.
  3. Mix together the sugar, flour, baking soda and salt. Add to banana mixture, mix well.
  4. Pour into prepared loaf pan, sprinkle with walnuts, and bake 1 hour or until a cake tester inserted in the center comes out clean.

It tastes even better the next day. I've made it with other sorts of mashed fruits - like strawberries and it works, but I like banana best.
