Banana Bread
Banana bread is good - it's good for breakfast, lunch, dessert, or warmed with butter.
You can add stuff to it - nuts, mini chocolate chips - or my new favorite - chopped dates!
I've totally reworked this recipe because the original is too dense - this one is now my favorite!
It tastes even better the next day. I've made it with other sorts of mashed fruits - like strawberries and it works, but I like banana best.

- 2 eggs, beaten
- 1/3 cup buttermilk
- 1/2 cup vegetable oil
- 3 mashed bananas
- 3/4 cups white sugar
- 3/4 cup brown sugar
- 1 3/4 cups all-purpose flour - maybe 1/4 cup more if batter is too thin
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- Preheat oven to 350 degrees F . Spray one 9x5 inch loaf pan with non-stick spray coating.
- Blend together the eggs, buttermilk, oil and bananas.
- Mix together the sugar, flour, baking soda and salt. Add to banana mixture, mix well.
- Pour into prepared loaf pan, sprinkle with walnuts, and bake 1 hour or until a cake tester inserted in the center comes out clean.
