Strawberry Jam

I made strawberry jam yesterday - it always reminds me of Meg, from Little Women - she tried to make jam as a new wife - and it didn't jell - her kitchen was a mess and she was hot from boiling jars and jam all day - she had a complete meltdown ....

This jam isn't like that! Freezer jam is not only easier than traditional jam - it tastes sooo much better - like fresh fruit, since it isn't cooked. Strawberry is the best jam I've tried - but using those Italian plums in the fall also makes great jam.


About 1 quart strawberries

4 cups sugar

1 pack Sure Gel



Wash, Cut up the strawberries

Mash strawberries with a potato masher

Add sugar to the berries, and let sit for 10 minutes, stirring once in a while

Put 3/4 cup water in small saucepan, add Sure Gel and stir

Bring to a boil over high heat, stirring constantly

Let boil for 1 minute

Pour into strawberry/sugar mix and stir for about 3 minutes

Pour into clean, small freezer containers.

Jam keeps about 1 year in freezer, 3 weeks in fridge.
