Low Carb Flax Muffins
Ok, It's time for some low carb food! It's not terrible to be on a low carb diet -but as much as I like steak and salads - I like something sweet and bready sometimes too ...
These muffins are kind of like banana bread or bran muffins - they don't taste like some weird health food - in other words I would even eat them if I wasn't on a diet (although I would add some raisins).
They are each 127 calories, with 1 net carb per muffin ( 4g carbs/3g fiber).
6 Tablespoons melted butter
3 eggs
0.25 cups sour cream (or heavy cream)
Beat these together & add:
0.5 cups Sugar Twin Brown ( or other sugar equivalent that measures as sugar)
1 Tsp vanilla
Mix the following together separately & then mix the following & add to above:
2 Tsp Cinnamon
1Tsp Nutmeg
1 rounded Tsp Baking Powder
1 cup Ground Flax seeds
0.25 cups Soy Flour
When they are mixed, place in 12 foil cupcake liners, and bake for 15 minutes at 375F.
