Irish Soda Bread


I suppose it isn't the Traditional recipe - as I've put in raisins, sugar, eggs and caraway seeds - but I'd also suppose that the poor Irish had enough sense that if they became as rich as we Irish are today they'd be putting these things in as well!
  • 4 to 4 1/2 cups flour
  • a bit of whole wheat flour (actually I may have used rye - I don't remember what was in the canister)
  • 2 Tbsp sugar
  • 1 teaspoon salt
  • 2 teaspoon baking soda
  • 4 Tbsp butter, frozen
  • 1 cup raisins
  • 1 egg, lightly beaten
  • 2 cups buttermilk
  • 1 Tbsp caraway seeds


1 Preheat oven to 425°. Sift together 4 cups of flour, the sugar, salt, and baking soda into a large mixing bowl.

2. Grate the frozen butter into the flour and stir well.

3. Stir in raisins and caraway seeds.

4. Make a well in the flour and add beaten egg and the buttermilk.

5. Stir to combine and knead as little as possible to make dough

6. Shape into round loaf and slash with a cross, place in pie pan or cast iron skillet.

7. Bake for about 45 minutes, check with skewer to see if it's done.

Place on a rack and cover with a cloth till cool
